Fish prices - Turbot!

I was just looking at fresh fish prices on line and could hardly believe my eyes when I saw how much Turbot costs filleted! Even with my dodgy filleting (i.e not getting the most off the fish) I reckon I've got well over £80 worth (probably more) of fresh turbot sat in the fridge after yesterdays trip! Add 5 bream to that and it makes for a serious couple of nights eating coming up!

Well it was one helluva fish andy. Imagine a 15lb fish! How much did you get off yours?

Richard - I reckon I got about 21/2lb - 3lb but I only took the thickest parts of the fillets with a sharper knife and a less slippery draining board I could have got another 1/2-3/4lb I reckon. I searched on Google and found a Company quoting fresh Wild Turbot Fillets 2 x Xl steaks (1.3lb) were quoted at over £50 (next day delivery!) - makes you think though when you sit down for tea tonight that you'll be eating something well beyond the reach of most people to eat! I might even put a couple of candles on the table and open a bottle of wine!

I haven't looked the bream up yet but I expect fresh wild bream would cost more the farmed. I had five keepers but when I'd finished filleting the Turbot I decided to pass three bream to my neighbour as I doubted we'd get around to eating it all - needless to say he was well chuffed!

Going to have to give you some lessons in filleting I reckon Andy! I got 2lb off my 6lb fish! When I fillet big fish I lie them on a tea towel so they can't slide around. Got a mustad filleting knife as well. Only cost £7 and is razor sharp. Its the one I had on the boat for filleting those mackerel.

I never bother filleting bream, just bake them whole. When we've finished eating them all thats left is clean bone.

The secret to filleting is 2 things:
A very sharp knife and confidence.

The sharp knife makes your job a lot easier and the confidence is so that you make confident cuts rather than slashing it to pieces.

Mackeral is a good fish to practice on (and you can do it on the beach!) but dont worry if you do leave fish on the bones when you fillet - just take it off in slivers and either put it in a fish pie or (my favourite) whip up some beer batter and deep fry those little bits - they'll taste delish!

just weighed the fillets i got from mine on the kitchen scales and it came to bang on 1lbs so must have done a ok job.

Just ate mine - in breadcrumbs shallow fried and then into the oven with some parmesan cheese grated ontop! Had it with chips and the wife even had ketchup too! Verdict - lovely! Double helpings and the dogs had some too! How posh are we? Very Happy

sounds good to me. Mines now vac packed in the freezer. Wifes away till wednesday so wasn't allowed to try it without her.

i got worzel to fillet lucys cod and had 2 lonf fillets really thick i cut in half again so had 4 long fillets then each long fillet cut into 3 so had 12 filletts they were still big . ill put pic lucys cod in batter tomorrow she took pic of
