Bream with Chili Lime Butter
After catching my first Bream, here's how i cooked it!
Ingredients:
Bream
Lime x 1
Butter
Salt and pepper
Red chili x 1
Garlic clove x 1
Parsley
* Firstly make the chili lime butter. Cut a large knob of butter, put in a bowl and add finely chopped chili, parsley and the zest of one lime. Then squeeze lime juice from one lime into the mixture. Add a little salt and pepper. Mix together. Then spoon the mixture onto either greaseproof paper/cling film/foil, roll the mixture into a sausage shape and then chill in the fridge for 20 mins.
* Then, gut scale the Bream and cut 3 scores in both sides of the skin. Slice the garlic thinly and slice 2-3 thin slices of lime. Lay some foil on a baking tray, place fish on the tray, drizzle with olive oil, season with salt and pepper, then place the garlic and lime slices over the fish. Wrap the fish in a parcel using the foil. Put in oven at 200 degrees for around 20 mins.
* When the fish is cooked, take the butter out of the fridge and slice a few discs of the butter, place on top of the bream and serve.
Hope that all makes sense, thought it tasted really good myself!

Now that does sound good. Just need to catch a few more bream. Bet it works a treat with mackerel and bass too.
