Sweet Spicy Cod

Take your boned, skinned and filleted cod, and cut into same thickness pieces about fishfinger size works best I find,

Mix lemon and lime juice in a bowl, and add caster sugar ... all equal amounts. As much as you need to soak however much cod you have.

Very finely chop some chillies, as many as you dare.

Then mix together.

Put the fish in the marinade for 20 minutes.

Break an egg in a bowl and beat.

Put some breacrumbs in another bowl.

Then go...fish...egg...breadcrumbs, and put the breaded cod on a plate. Repeat till you have enough to fill a large frying pan.

Get the pan hot with some olive oil, the cook the fish a few minutes each side till golden/burnt.

Eat straight away. It's sweet, citrusy and spicy...and it's 'kin lush

Me and the neighbours ate 8-10lb of fillets last week like this in 2 nights, and they all loved it Very Happy

Just need to catch some cod!

Don't you flour the fish before dipping in the egg and breadcrumbs? I find its a necessity to stop the coating falling off during cooking.

not done that but will try. It works as is but sometimes it does fall apart Smile

Yeh, a light dusting of flour really helps and if you're feeling really brave you can add some cayenne to the flour first!! Embarassed

i must try that John but with the winds tipping the playhouse on its roof for the second time today i dont think i wanna be by the sea lol

I've just made these and very nice they were too, added some cayenne like Richard suggested and a bit of soy sauce in the marinade.
