Cure for Home Smoking
Does anyone have a good cure for hot smoking at home ?
I've been using a mix of:
1 litre boiling water
70g sea salt
60g soft light brown sugar
3 crushed garlic cloves
10 peppercorns
2 tsp smoked paprika
6 springs thyme
2 bay leaves
I use this for smoking mackerel fillets and the results are very good, just looking for some variety.
Any recipes would be great

No, that's a brine mix (Cure). You mix the ingredients, soak your fillets for an hour or so then air dry the fish. The salt helps form a slight crust which locks in moisture and stops the fishing drying out while it's in your smoker. Just wondered if anyone had a mix that was good with different herbs/spices.

Keep meaning to try smoking some fish. I know you can take your own fish to the Bridport smokery. Think they do hot and cold smoking.
Thats quite a complicated mix you've got there for brining. Bet the fish tastes pretty good. Could always try different themes. Chinese spices comes to mind.

this works pretty well for home smoking:
one packet of Rizla papers
50g hand rolling tobacco
one lighter
And the cure.......................
loose the lighter

i used to have a pretty big cold smoker and this book helped, lots of ideas and suggestions just about all you need inc cures, got the idea for smoked prawns ssssssooooooooooo goooooood!

I have checked and you can still get it pretty cheap on amazon. I had a copy but the ex has ditched it otherwise you would be welcome to it.
