Baked Mackerel in Cider

Baked Mackerel in Cider
If you are trying to impress the neighbours you can call this Baked Mackerel with Caramelised Apple and Cider Sauce.
I like to start with 2 pints of dry cider.
Recipe
4 Mackerel Fillets
1-2oz Melted Butter
½ pt Dry Cider
2 Dessert Apples thinly sliced
2 tbsp Crème fraiche
Preheat oven to 180 C /350 F /Gas 4. (Have a glass of cider whilst oven warms up)
Place fish into roasting tray.
Mix melted butter and cider and pour 2/3 of it over the fish.
Add apples
Bake for 20 -25 mins (fish should be easy to flake and apples should have started to caramelise). (Have another glass of cider whilst fish cooks)
Warm remaining butter/cider mixture and whisk in crème fraiche, pour over fish.
Serve with new potatoes or creamy mash or even a green salad. (drink rest of cider).

Please note only 1/2 pint cider goes in recipe, the rest goes in the cook.

I cooked something similar the other week, the only difference was that the fish was fried in olive oil and all the cider went into the cook!

Interesting recipe. I like the idea of the cider and apples to cut through the oily fish, but I think I'll give the creme fresh a miss for my taste.
